다중 코팅 글루텐 분해 유산균 복합제 분말 및 이의 제조 방법 특허 배경 및 요약

[배경]

유산균은 인류가 가장 오랫동안 광범위하게 활용하고 있는 미생물로서, 발효유 제조, 건강및 기능성 식품, 정장제, 의약품 및 생균제제로 활용되고 있다. 유산균은 동물의 생장 촉진, 사료 이용효율 증가, 질병에 대한 저항력 증대, 유해세균의 증식 억제, 폐사율 감소 및 부패 독성물질의 생성 억제 등의 특징이 있으며, 또한 인간의 장내에서 공생하면서  장의 연동운동을 활발하게 유지시켜 장내 이상발효 억제, 장 기능 이상을 개선시키는 동시에 섭생활동을 원활하게 유지시키는 역할을 한다.


이 중 글루텐 분해 유산균은 글루텐을 분해 소화시켜 글루텐 불내증과 알레르기에 유용하고 당분해 효소 활성 증가, 위장 소화 개선 등의 효능을 가지기 때문에 글루텐 불내증으로 인해 발생하는 셀리악병(Celiac disease) 또는 글루텐 알레르기 등으로 인해 곡류 가루 가공 식품을 섭취하지 못했던 사람들에게 매우 유용하게 제공될 수 있다.


유산균은 주로 발효 산물을 이용하는 다른 산업용 미생물과는 달리 생균 자체를 이용하기때문에 유통 기간 중 생존력의 유지는 매우 중요한 문제이다. 이와 같이 유산균은 효용과 가치 면에서 매우 유익한 균임에도 불구하고 상당히 불안정하여 장기간 보관하고 사용 하는데 많은 제약이 따르며, 또한 이를 이용한 발효유제품 및 생균제제는 제조과정과 유통기간 중 산소나 산에 의하여 생존력이 크게 영향을 받는 것으로 알려져 있다[Molder etc al, Can. Inst. Food. Sci. Technol. ,1990, 39, 900-907].


유산균은 보통 액상으로 배양되어 이용되고 있으나, 편의상 또는 장기보존을 위해 이를 분말형태로 제조하여 이용하기도 한다. 일반적으로 유산균은 동결 건조법 또는 분사 건조법에 의하여 분말 형태로 제조하며, 그 중 동결 건조법은 동결건조용 현탁용액에 미생물을 현탁시켜 동결시킨 후 감압 하에서 건조시키는 방법이다. 그러나, 유산균은 편혐기성이고 주위환경에 매우 민감하기 때문에, 분말 유산균은 저온 및 상온에서 생존력이 저하되어 생균수가 감소하게 된다. 이에, 본 발명자들은 상기한 문제점을 해결하고자 서로 다른 폴리머로 다중 코팅된 글루텐 분해용 유산균 복합제 분말을 제조하였고, 분말 상태에서 유산균 복합제의 생존력 및 안정성을 향상시켜 저온상온에서 유산균을 장기간 동안 보존할 수 있음을 알아내어 본 발명을 완성하였다.


[요약]

본 발명은 백목이버섯 균사체 유래 다당체 및 베타글루칸을 이용하여 글루텐을 분해 소화시켜 글루텐 불내증과 알레르기에 유용하고 당분해 효소 활성 증가, 위장 소화 개선 등의 효능을 가지는 글루텐 분해 유산균의 다중 코팅을 통한 생존력이 향상된 글루텐 분해 유산균 복합제 분말 및 그제조방법에 관한 것으로, 더욱 구체적으로 글루텐 분해 유산균 복합제를 폴리머로 다중 코팅한 글루텐 분해 유산균 분말 및 그의 제조방법에 관한 것이다.
